It’s been a delicious weekend, made all the better for the sunny weather. I actually got to wear a summer dress, happiness is!
Yesterday we celebrated Dar’s Mum’s birthday with lunch out with his family in The Step Inn in Stepaside. They have a reputation for good food and my Chicken Caesar Salad didn’t disappoint. I have a bit of a Caesar Salad fetish so it was an easy choice when I saw it on the menu. Dar had one too so I slipped him one of my pieces of bacon, I knew he was eyeing it up
Saturday night was “Culture Night” chez Sunny Side Up! Last time was Japanese, this time was Greek. It was my turn to organise the food, I had great intentions of making everything from scratch but ended up short on time and bought from my local deli counter instead. We had a feast of calamari with aioli and salad, hummus and tzatiki with pitta, salad and garlic stuffed olives. It was so much fun! Did you know that Greece is the worlds third largest producer of olives? It is made up of over 2,000 islands, only 227 of which are inhabited. I haven’t been yet but it’s definitely on my travel list!
Today started with freshly squeezed orange juice, it was a lovely start to a lazy morning!
The forecast was for sun but the morning was cloudy and dull so I took the opportunity to bake! I have a sweet tooth but I prefer to have homemade goodies when I can and I fancied some Banana & Walnut Bread. I used one of Delia’s recipes from her Complete Cookery Course book, this was my bible when I was cooking in the Alps and my go to place for reliable recipes.
I mixed together the butter, sugar, egg, flour and baking powder (don’t worry, the mix should be pretty dry at this stage).
Mashed the banana… with a potato masher, it was much quicker than a fork!!!!
Added the banana, citrus zest and chopped walnut and mixed again. I may have licked the beaters at this point!
Popped in the oven. Easy as that!
110g caster sugar
1 large egg, beaten
225g plain flour, sifted
2 level tsp baking powder
4 medium bananas, peeled
grated zest of 1 lemon
grated zest of 1 lime
50g walnuts, roughly chopped
- Preheat oven to 180C/350F
- Line a 2lb loaf tin with baking parchment
- Whisk together butter, sugar, egg, flour and baking powder
- Add orange and lemon rinds with mashed banana and chopped walnuts and whisk thoroughly
- Put mixture in baking tin
- Bake for 50 mins approx
- Cool on wire rack
I drizzled the cake with icing sugar when cool, to make it extra pretty.
